The evolution of Pacojet 4
The pacotizing® process was invented by Wilhelm Maurer, a Swiss engineer living in Brazil, in the early 1980s while trying to design a new ice cream machine. In 1988, Maurer sold the patent to Gregor Staub and, already in 1992, he launched Pacojet, the high quality machine that has achieved great sales success in restaurants all over the world.
After more than 30 years, Pacojet is synonymous with top quality, added value, unlimited creativity and a great variety so that you can create unique dishes. In fact, it has always had the vision of being a brand for the professional and, since its beginnings, it has been present in the best kitchens in the world without exclusion.
With a successful model, the brand has always maintained its concern for continuous improvement and innovation. First of all, we would like to highlight its renewed, modern and impeccable image, which makes its lines more technical and offers a surprising layout to the kitchens and workrooms on view.
Colour touch screen and data logger
Its large colour touchscreen offers a large menu with well-organised functions and direct access to all its possibilities. Its unique data logger allows you to archive and record recipes, sort and classify them according to use and frequency.
Its powerful and fast memory saves and records all the steps performed in order to be able to learn from mistakes, as well as providing the technical service with valuable information for maintenance and details that need to be improved in future versions.
Working on this screen is a real pleasure, as the layout is very intuitive and allows you to access any function with a single click and without having to scroll through screens.
Low noise level
Its main novelty is the very low noise level during the pacotization® of each glass, especially on the first pass with the glass just taken out of the freezer, unlike its predecessors.
If you were already a Pacojet user, this point will surprise you, as the sound insulation of this model is an incredible advance and it is no longer an inconvenience to have your Pacojet 4 at first use.
Ultra Speed Option
Another novelty is the Ultra Speed option, capable of pacotizing® a glass of ten ice cream portions in just 90 seconds, greatly facilitating preparation before serving and increasing production.
Working with overpressure is a highlight in the ice cream world, as it allows overruns of up to 30% depending on the product. The texture is closer to that of ice cream and it is possible to achieve a creamier and silkier result.
Repeating the most common actions allows you to be more carefree and makes your work easier, so this mode is great and adds to recipe recording as a key functional element.
Guided cleaning system
With a new guided cleaning system, it makes it much easier to sanitise after service and maintenance, leaving behind the cumbersome brush system of the previous model.
The Cleaning Tabs have been specifically designed for foam-free cleaning of blades and inner shafts, with no soap or limescale residue. In accordance with HACCP standards, your machine is treated with an antibacterial product and is ready for use again in complete safety.
Polycarbonate glass
The new polycarbonate beakers are virtually indestructible. They replace the metal beakers and are tough, transparent and reasonably priced compared to the chrome beakers of previous models. Thanks to their transparency, in fact, they do not hide how many portions are left in the glass or the product to be processed inside.
If you own a previous version of Pacojet, remember that you can also use its chrome beakers, but you must use a different beaker holder than the one used in Pacojet 4 or in your old machine.
